- 1 tbsp soy sauce
- 1 tbsp tamarind paste (optional)
- Salt to taste
- 2 tbsp coconut oil
Instructions:
- Heat oil, add mustard seeds, cinnamon, cardamom, and curry leaves.
- Sauté onion, garlic, ginger, and chilies until fragrant.
- Add spices, stir for 1-2 minutes.
- Add tomato and jackfruit, cook a few minutes.
- Pour in coconut milk, soy sauce, tamarind, and salt.
- Simmer 20-30 minutes.
- Adjust seasoning and serve with rice or roti.
