1. Jackfruit Curry

Ingredients:


• 1 can of unripe jackfruit, drained and shredded (or fresh jackfruit, peeled and chopped)
• 1 onion, chopped
• 2 garlic cloves, minced

• 1 tbsp curry powder
• 1/2 tsp turmeric powder
• 1/2 tsp cinnamon powder
• 1 can coconut milk
• 1 cup vegetable broth

Instructions:


In a large pan, heat some oil over medium heat and sauté the onion, garlic, and ginger until softened. Add the jackfruit, curry powder, turmeric, cinnamon, salt, and pepper. Cook for a few minutes, stirring to coat the jackfruit with the spices. Pour in the coconut milk and vegetable broth, and bring to a simmer. Ingredients:


• 1 can of young jackfruit, drained and shredded
• 1 cup barbecue sauce (store-bought or homemade)
• 1 tbsp olive oil
• 1 small onion, chopped
• 2 garlic cloves, minced
• 1 tsp smoked paprika
• 1/2 tsp cumin
• Salt and pepper to taste
• Burger buns

Instructions:


Heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened. Add the shredded jackfruit, smoked paprika, cumin, salt, and pepper, stirring to combine. Ingredients:


• 1 can young jackfruit, drained and shredded
• 1 cup buttermilk
• 1 cup flour

Instructions:


Soak the shredded jackfruit in buttermilk for at least 30 minutes. In a separate bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. Heat oil in a large skillet over medium-high heat. Dredge the soaked jackfruit in the flour mixture, making sure it's well coated. Ingredients:


• 1 can of young jackfruit, drained and chopped
• 2 tbsp olive oil
• 1 onion, chopped
• 2 carrots, chopped
• 2 celery stalks, chopped

• 1/2 cup red wine (optional)
• 1 tbsp tomato paste

Instructions:


In a large pot or Dutch oven, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for about 5 minutes. Add the garlic, jackfruit, tomato paste, thyme, bay leaf, salt, and pepper. Stir well. Pour in the vegetable broth and wine (if using). 6. Jackfruit Enchiladas

• 1 can of young jackfruit, drained and shredded

• 1 can of enchilada sauce
• 1 cup beer (optional, for braising)
• 8-10 corn tortillas

Instructions:


In a large skillet, sauté the onion and garlic until softened. Add the shredded jackfruit and cook for 5-10 minutes. Add the beer and simmer until the liquid evaporates, leaving the jackfruit tender and flavorful. Preheat your oven to 375°F (190°C). Pour a small amount of enchilada sauce into a baking dish. Ingredients:


• 1 can young jackfruit (or fresh)
• 1 onion, chopped
• 2-3 garlic cloves, minced
• 1-inch ginger, grated
• 2-3 green chilies, sliced
• 1 tomato, chopped
• 1 can coconut milk (400ml)
• 1 tsp turmeric, cumin, coriander, curry powder
• 1/2 tsp mustard seeds, 1 cinnamon stick, 3-4 cardamom pods, curry leaves
• 1 tbsp soy sauce
• 1 tbsp tamarind paste (optional)
• Salt to taste
• 2 tbsp coconut oil

Instructions:


Heat oil, add mustard seeds, cinnamon, cardamom, and curry leaves. Sauté onion, garlic, ginger, and chilies until fragrant. Add spices, stir for 1-2 minutes. Add tomato and jackfruit, cook a few minutes. Pour in coconut milk, soy sauce, tamarind, and salt. Simmer 20-30 minutes. Adjust seasoning and serve with rice or roti.
