1. Jackfruit Curry
Ingredients:
• 1 can of unripe jackfruit, drained and shredded (or fresh jackfruit, peeled and chopped)
• 1 onion, chopped
• 2 garlic cloves, minced
• 1-inch piece of ginger, minced
• 1 tbsp curry powder
• 1/2 tsp turmeric powder
• 1/2 tsp cinnamon powder
• 1 can coconut milk
• 1 cup vegetable broth
• Salt and pepper to taste
• Fresh cilantro for garnish
Instructions:
In a large pan, heat some oil over medium heat and sauté the onion, garlic, and ginger until softened. Add the jackfruit, curry powder, turmeric, cinnamon, salt, and pepper. Cook for a few minutes, stirring to coat the jackfruit with the spices. Pour in the coconut milk and vegetable broth, and bring to a simmer. Let it cook for 25-30 minutes, stirring occasionally, until the jackfruit is tender and the curry thickens. Serve hot, garnished with fresh cilantro.
